This is a great treat to impress your friends: boat-shaped turnovers with golden seams and a burst of flavor from the Akkawi cheese and nigella seeds inside. Bread-based dishes like this one, and the spreads that accompany them, like hummus, are served up at any time of the day, from breakfast, to picnics, right through to dinner. I always thought of fatayer as a baking affair prepared by women — as I’d seen my mom and her friends do - - to be enjoyed at a big azoumeh, or house party, so I was shocked the first time I saw burly men making them en-masse in bakeries in Lebanon, where men hold more of the large-scale production-type jobs. Fatayer uses a vegan pastry dough. The filling here is vegetarian with Akkawi cheese and nigella seeds, common items found in Arab and Middle Eastern markets. The Akkawi cheese can be substituted for another crumbling melting cheese like Oaxacan cheese or mozzarella.
